Chicken Salad Sandwiches


This is to help with your fitness program, Lauren. Just an idea for a quick and easy dinner that you can throw together in no time! I especially like this for summer because it is cold and crunchy and you can make as much or as little as you need. I got this from the Lion House cookbook, but really I just threw in some grapes, pineapple, celery, chicken, and cashews. for the dressing you just mix a little lemon juice (by little i mean i used a teaspoon for four servings), and 1 cup of whip cream to half a cup of miracle whip or mayo.
